Recipe of the Week

Mexican Rice Casserole (serves 8)

4 cups basic brown rice (recipe in previous post)
1 1/2 cups grated Monterey Jack or Cheddar cheese
2 bunches green onions, chopped
1/2 cup pitted black olives, chopped
2 small cans green chile peppers, chopped
1 cup creme fraiche

Combine all ingredients except 1/2 cup grated cheese and pour into a buttered casserole dish. Top with cheese and bake at 350 degrees for about 30 minutes. Slightly spicy, this dish may not be your child's favorite, but it does bring life to your mouth!
