Mediterranean Herb and Cheese Pizza with Mixed Greens and Champagne Vinaigrette
Ingredients:
1 pound ball of Artisan bread dough
2-3 tblsp. organic olive oil
1-2 tblsp. each of oregano, basil, parsley, and garlic
parmesan cheese
Havarti/Provolone/Mozorella cheese (shredded or sliced) (Look for cheese from cows not treated with hormones and antibiotics)
Preheat oven to 500 degrees and place rectangular cookie sheet in center.
Using a grapefruit-sized piece of Artisan bread dough, you can make this delicious pizza that's better than any crust you can buy in the store (at least I think). Liberally flour a rectangular cutting board and roll out dough to desired thickness...flouring as you go to prevent dough from sticking. Brush dough with good organic olive oil, and sprinkle enough basil, oregano, parsley, and garlic to cover. Sprinkle with Parmesan cheese and cover with Provolone, Havarti, or whatever cheese you prefer. Add a small handfull of crumbled feta and maybe some black olives and transfer to heated rectangular cookie sheet sprayed with organic olive oil spray. Bake at 500 degrees for about 10 minutes.
Serve with a mixed green salad with champagne vinaigrette.
Dressing:
1 tsp. honey dijon
2 tblsp. champagne vinegar (or rice wine vinegar) something mild
1/2 cup olive oil
Mix Dijon mustard and vinegar; stirring as you add the olive oil until emulsified. Season with salt and pepper and drizzle over greens. If you prefer a sweeter dressing, just add some maple syrup to your mix.
